We LOVE fall and all of the great fun it brings. The following recipe has been a hit in our house this year. Drew (the non-veggie eater) even LOVES them! After 3 batches we’ve tweaked this and that to give the original recipe a “Healthier Boost”. Aside from how yummy they are, another bonus is your home will smell WONDERFUL while these are baking! MMMM!

Pumpkin Spice Cookies
Ingredients:
1 cup whole wheat flour
1 1/2 cups all-purpose unbleached flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cream of tartar
2 teaspoons ground cinnamon
1/2 teaspoon ground all spice
1/2 teaspoon ground cloves
1/2 teaspoon sea salt
1/2 cup trans-fat free margarine, softened
1 cup brown sugar lightly packed
1/2 cup sugar in the raw (or granulated sugar)
1 cup canned pumpkin puree
2 egg whites
1 teaspoon pure vanilla extract
Frosting Topping
2 cups confectioners' sugar
3 tablespoons 2% milk
1 tablespoon melted trans-fat free margarine
1 teaspoon pure vanilla extract
¼ teaspoon cinnamon (optional)
¼ teaspoon allspice (optional)
Directions
1.Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cream of tartar, cinnamon, all spice, ground cloves, and salt; set aside.
2.In a separate bowl, cream together the 1/2 cup of margarine, brown and white sugar. Add pumpkin, egg whites, and 1 teaspoon vanilla to margarine mixture, and beat until creamy. Mix in dry ingredients by hand with large mixing spoon until combined. Drop on cookie sheet using a tablespoon or tablespoon size cookie scoop; flatten slightly with back of fork.
3.Bake for 13 to 18 minutes in the preheated oven until just firm. Cool cookies, then frost cookies with glaze.
To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted margarine, and 1 teaspoon vanilla. Add milk as needed, to achieve a frosting consistancy or a drizzling consistency (whichever you prefer).
